Seems like I am always looking for a better Chicken Pie recipe. So tired of the cream of something soup and frozen mixed veggie recipes. When I roast a chicken or buy one roasted I always manage to stretch it out to a chicken soup and a pot pie for three meals. Last night I tried the attached recipe substituting frozen pie crust for the topping and it was soooo good that I just had to share it with you. Let me know if you try it out. Would love to hear your reaction and anything we could do to make it even better... I added half a chopped red pepper... could add some corn to give it a little more crunch???? or send me the recipe you like to use.
